Dried Blueberry and Arugula Salad

Dried Blueberry & Arugula Salad

6  cups fresh arugula, trimmed and torn into bite-sized pieces
1  medium red onion, diced
1  medium cucumber, diced
¼  cup chopped walnuts
¼  cup dried blueberries
¼  cup balsamic vinegar
¼  cup extra-virgin olive oil
¼  cup blueberry juice
Salt and pepper

To Prepare Salad - In a large serving bowl, combine the arugula, onion, cucumber, walnuts,
and dried blueberries.

To Prepare dressing :  In a small bowl, whisk together the vinegar, olive oil, and blueberry
juice. Add salt and pepper to taste, Add the dressing to the salad, and toss lightly together.

Healthy Stats -Nutrition analysis per serving  169 calories, 15.4 g carbohydrate, 2 g protein, 12.6 g fat,
2.1 g dietary fiber
